2008 FitKids Recipes

Thanks to everyone who submitted recipes for the 2008 Kid Chef Contest. We've selected some of our favorites here, including the contest winner, Sydney Reitz with her Baked Tilapia recipe.

Baked Tilapia by Sydney
Ingredients:
Tilapia fish filet
Non-stick cooking spray
1 tablespoon lemon juice
McCormick's Vegetable Supreme Seasoning

Spray baking dish with non-stick cooking spray
Place Tilapia in dish
Drizzle lemon juice over fish
Sprinkle seasoning over fish
Bake 350 for 20 minutes

Bean Taco by Spencer
Ingredients:
1 can fat-free refried beans (16oz)
2 tablespoons taco seasoning (Taco Bell)
Taco shells (hard or soft)
Shredded Cheese
Shredded lettuce

Open can and pour beans into medium bowl.
Stir in 2 tablespoons taco seasoning.
Heat in microwave 30 seconds and stir.
Spread beans on taco shell.
Add cheese and lettuce

Tofu Town by Joy
Ingredients:
1 cup rice
1/2 lb firm tofu
green food coloring
broccoli
baby carrots

Optional:
slice of cheese
Parmesan cheese

Cook rice with 3-4 drops of green food coloring. This will be the grass of your tofu town.
Cook the broccoli and carrots.
When the rice is done, place 1/2 of the rice on a plate (optional: place 1 slice of cheese under the rice as "buried treasure".)
Drain the tofu and cut it into small squares for houses.
Place cooked broccoli between houses for trees.
Place carrots on the rice grass for people.
If you want, sprinkle parmesan cheese for snow.
Makes 2 servings

Victoria's Banana Bread by Victoria
Combine (easiest in food processor):
2 Eggs (at room temperature)
3 Ripe Banana's
2-4 Ounce Cups of Apple Sauce (flavor of your choice)
1 Stick of Butter Softened @ Room Temperature
2 (15g ea) Scoops of 100% Organic Sprouted Golden Flax (Raw/Gluten Free/Cold Processed/Vegan)
1 Tbsp of Vanilla

Combine Separately:
2 Cups All-Natural Traditional Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking Powder

Slowly combine all ingredients slowly to not over mix the flour.
Additional add ins once everything is combined: 1/4 C chopped nuts and/or 1/4 C dried fruit

Baking Instructions:
Bake for 45 minutes to 1 hour depending on pan size at 325 degrees.
These make excellent muffins or banana bread in a loaf pan!
